Orange shrimp with pine nut flan, celery puree and olive cream (4 servings)

Shrimp in Orange Marinade

  • 750 g large shrimp
  • 2 garlic cloves, peel and mash
  • 1 orange zest, cut into thin strips
  • ? tsp orange powder (see chef's notes)
  • 100 ml olive oil
  • salt pepper

Pine Nuts Flan

  • 50 g fried pine nuts
  • 100 ml fat cream
  • 100 ml of milk
  • 2 egg yolks
  • some lemon zest

Celery Puree

  • 200 g celery root, cut into cubes
  • 5 g celery seed
  • 30 ml cream
  • a few thin strips of orange zest
  • salt pepper

Lemon jelly

  • 50 ml of lemon (or other acidic) juice
  • 20 g sugar
  • ? plates of gelatin soaked in water and squeezed

Olive cream

  • 120 ml olive oil
  • 1 egg yolk
  • 2 tbsp. l water
  • some lemon juice
  • salt, white pepper

To decorate

Very thin strips of lemon peel,
fried pine nuts, greens

Cooking method

Peel tiger prawns, leaving only ponytails. Mix all the ingredients for the marinade, soak the shrimp in it for several hours. Lightly fry in oil until golden brown over high heat.

For a flan - bring milk and cream to a boil, add nuts and lemon zest. Beat in a blender until mashed, add spices and egg yolks, mix well. Put the mixture in small ceramic forms, put them on a baking sheet, cover each foil and bake in the oven for 8 minutes at a temperature of 180 ° C. Remove from the oven, cool.

Mix sugar and lemon juice, bring to a boil, add gelatin and keep on fire until the gelatin dissolves. Cool. Put in each flan a tablespoon of lemon jelly and leave until serving. Before serving, sprinkle flans with fried pine nuts and strips of lemon zest.

To prepare an olive cream, beat the egg yolk and water in a steam bath until foamy, add olive oil in small portions until the mixture becomes thick and creamy. Add salt, pepper and lemon juice to taste.

Serving

Put three small slides of celery puree on each plate, and place shrimps in the center. Pour all this with olive cream, sprinkle with roasted pine nuts on top. Near the shrimp put on a nut flan. Decorate the dish with herbs.

Chef's notes

Amazing taste of shrimp gives orange powder. It can be bought at the supermarket, but nothing beats fresh homemade orange powder. To prepare the powder, you need to cut the oranges into thin circles, dry them in the open air. Crush the dried oranges in a mortar or grind once in a blender until powdery.
