Restaurant "Spring"

Text: Elena Grunitz

SPRING IS FRESHNESS, REVIVAL AND YOUTH. THESE CHARACTERISTICS ARE IMPLEMENTED IN THE NEW SLAVIC RESTAURANT "SPRING" OPENING ON NOVEMBER 20 IN THE CONRAD HOTEL AT SHEIKH ZAYED ROAD.

This is a seemingly unusual designation - "Slavic" - the restaurant received due to its menu, which includes traditional dishes of both Russian, and Ukrainian, Belarusian and even Georgian cuisine. Here you will find all those typical goodies that we have known since childhood. Cutlets, pies, borscht, potato pancakes and much more - delicious at home, in an elegant restaurant format and with an interesting creative presentation.

But do not immediately think that "Spring" is "another Russian restaurant, of which there are many and they are all the same." The concept of this restaurant is very original and unique in its own way. The main idea is impeccable quality, modernity and at the same time authenticity in all aspects: from recipes to products used (only biologically pure and of the highest quality), from a chef from St. Petersburg who won Russian and international prizes, to service and kitchen staff - only Ukrainians and Russians. In “Spring” you will not see waiters from Southeast Asia trying to explain to you, a native of the post-Soviet space, what good, for example, Ukrainian borsch is. Even the dishes on which the dishes are served are made by special order at the Imperial Porcelain Factory in St. Petersburg.

Chef Maxim Tvorogov, young and daring in terms of cooking, known to the general public thanks to the Food channel and the programs of the First Channel “Control Procurement” and “Time for Lunch”, brought his personal note to traditional dishes. His idea is to bring Slavic cuisine out of the cliche with a “heavy and chopped ax” and give it shades of other prestigious European culinary traditions - for example, French or Italian. Or adapt some oriental elements. Chicken Kiev can be breaded in Japanese breadcrumbs, and Indian spices can be added to the borsch (why not?). But this does not mean that the taste of these traditional and close to us dishes will change beyond recognition. On the contrary, such non-standard details will only emphasize its taste and even improve. There are also surprises on the menu - desserts with flavors that you did not even suspect existed, or unexpected combinations of various cuisines, such as buckwheat risotto. A signature cocktail "Spring", which you can try in the lounge area, is another exclusive, and it is served ... in the teapot!

The wine list is not extensive, but informative. After all, as you know, Slavic cuisine is usually accompanied by stronger drinks, the choice of which in the "Spring" is quite wide. The restaurant pays special attention to the personal service of each client and the original serving of dishes. Be sure to try okroshka in a plate of real ice - a good mood and a sense of freshness of the Slavic summer are guaranteed!

The interior of the restaurant, like its menu, combines tradition and modernity. Brick walls and large crystal chandeliers, combined with modern décor and an intricate play of light, change the traditional view of that very “Russian restaurant abroad”. There are no samovars or nesting dolls here, but some discreet details of a typical Slavic atmosphere will make each of the visitors feel at home.

The lounge area adjacent to the restaurant is decorated in a club style with soft sofas and armchairs. And in the dining room you can observe the work of the chef and his assistants in the open kitchen, the main attraction of which is a grill with live fire. In the restaurant you can hear live vocals accompanied by a piano, as well as dance to incendiary singles of the DJ. And for those who want to have dinner, away from prying eyes, there is also a VIP room.

In the future, the Vesna restaurant plans to bake its own bread, as well as brunches and workshops for adults and children. Currently, everyone has the opportunity to visit the restaurant and try dishes and drinks in accordance with the menu, without waiting for the official opening on November 20.
